Lightly settled overnight without chilling and transferred to barrel, retaining most of the solids. Wild yeast fermentation, full malolactic fermentation and 12 months maturation in French oak barrels 85% (10% new) and 15% tank. Blended after 12 months and settled in tank for six months for natural clarification prior to bottling without fining or filtration, in September 2019.\u003c\/p\u003e\n\u003cp\u003ePale yellow in colour, this wine displays attractive floral notes and aromas of citrus, white peach, pear blossom with subtle smoky characters. The palate is rich, with tangy citrus pith, Beurré Bosc pear and white peach, interwoven with a chalky texture and nuanced minerality.
